Brasserie Bread
Brasserie Bread is the realisation of a dream that started decades ago at Bayswater Brasserie in Kings Cross, the iconic Sydney restaurant opened by Tony Papas in 1982. In 1989 Tony was joined by Michael Klausen, and they both believed "a great Sydney dining experience was not complete without a fantastic bread accompaniment". Earlier in his career, Tony had worked with some of the best artisan bread bakers in San Francisco where he was introduced to the art of making naturally leavened bread. In 1995 Tony and Michael baked their first loaf of organic sourdough bread at the Bayswater Brasserie and haven't looked back since. They still believe there are no short-cuts to making great bread, and Brasserie Bread's award winning reputation has been built on honouring the traditions of artisan baking. Our unique Training School holds a range of baking classes for kids and adults (both enthusiastic foodies and food professionals) aimed at introducing the art and passion of artisan baking. For Kids (and the relief of their parents!) there is a School Holiday Baking Program held every school holiday, and organised School Excursions. For the "grown-ups" there are Team Building courses, Artisan Baking Classes and Breaducation for our wholesale bread customers. The Brasserie Bread team |

We grow a large amount of the veges ourselves on our farm in Citt Town. We also get some from neighbouring farms & local growers in the Sydney basin as well as a handful of regional growers
We also specialise in heirloom varieties (i.e. older varieties of vegetables) |
